This is something that repeats itself every year. If I remember correctly I already wrote last year (and the year before?) that the Nuremberg Toy Fair is not a collectors fair. It is what it says: a Toy Fair. It's main objective is to get orders from the toy shops in Germany and neighboring countries. On the side distribution deals are made. It is definitely NOT intended for the general public and if you're not a dealer in toys or models you're not even welcome at most companies.
GeminiJets and others are not present, because there's no German distributor. You'll hardly find them in any toystore in Germany. The Chinese companies (I guess you refer to Netmodels and others) are not there because they're not licensed and would get in troubles with German authorities.
Schuco has already finished the deal with Inflight200 and there are rumours the deal with Inflight500 is next (this could actually be good news, as Inflight500 models are actually cheaper in countries that Schuco does not deliver to).
So the only interesting stop for collectors is the Herpa stand. Only, they are also mainly present to sell their products to their dealers. Of course they'll take time to chat with collectors if possible, but it can only be an exception. This fair is business!

If you want to make a worthwile trip to Germany as a collector, go to the Wings Boerse in Dusseldorf, where you can meet fellow collectors, buy or trade interesting models and Herpa will usually also be there and maybe reveal some news (like the last time...)
