It depends on the direction of spin...Do reverse correction by pushing max throttle to recover the stall, second, apply rudder pressure to the oppsite direction while turning the aircraft in the same direction...or maybee..

Ah what the hell!! I don't know what the heck i'm talking about.

Spin recovery:

Aileron neutral.
Add rudder in direction opposite of spin.
When rudder hits the stop, briskly push forward on the yoke, breaking the stall.
GENTLY pull out of the dive.

You're right, he shouldn't have flown over the ocean at night without an instrument rating. If you ever get into a situation inadvertently you got to fly straight and level and do a 180 back to visual conditions.

Juneau is correct

Ice build-up reduces the amount of lift produced, and increases the stall speed

So when landing use no flaps and increase your usual landing speed by 10-20 knots...and try to find the longest runway in the area
